6 double lamb chops 1 1/2 inches thick
1 medium onion, sliced
1/4 cup olive oil
1/2 cup soy sauce
1 garlic clove
1/2t tarragon
1t whole peppercorns
1t coarse salt
1/2 cup dry sherry
1 T butter

Directions:
Directions:
Stir all ingredients except chops an butter in shallow baking dish. Add chops to marinate. Refrigerate over nigh, turning once.

Remove chops from marinade and place on broiler pan. Broil 3" from flame about 9 minutes each side.

While chops are broiling, pour marinade in saucepan. Bring to quick boil, add 2 T butter and use as gravy.

I remember her making this in the old house, and I remember that she always marinaded her lamb chops in soy sauce. I just don't remember this recipe.
