1/2 Cup Raisins soaked in Orange Juice
3 Cups Cooked White Rice
1/2 Grated Orange and Juice
1/2 Grated Lemon and Juice
2 Egg Yolks, Beaten
2 Egg Whites, Beaten
1/2 Cup Sugar
1 Teaspoon Ground Cinnamon

Mix all ingredients except egg whites together. Add whites last and fold in gently. Bake in greased 8" round casserole at 350º for 1 hour or until browned.

I loved Grandma's rice pudding. I always asked her to make if for me when I came home from school, or knew I was going to be up in Stuart. It was one of the first recipes I collected from the family. January 22, 2014: I have found an earlier version of this in my mother's old recipes, and have changed this to match.
