Ingredients:  
1 head cauliflower, broken into small flowerets
4 carrots, sliced
2 green peppers, cubed
1 jar green olives, drained
1 can black olives, drained
2 stalks celery, sliced
1 1/2 c. cider vinegar
2 cloves garlic, minced
1 c. salad oil
1 c. water
1 Tbsp. salt
1 tsp. oregano

Directions:
Directions:
Place vegetables in a large bowl. Place vinegar, garlic, oil, water, salt and oregano in a saucepan. Bring to a boil and simmer for 5 minutes. Take off heat and let stand for 10 minutes. Pour over vegetables and let marinate overnight.
