Crust: 1/2 cup butter
1 cup flour
1/2 cup firmly packed brown sugar
Filling: 1 cup firmly packed brown sugar
2 eggs
2 tbslp flour
pinch baking soda
pinch of salt
1/2 tsp vanilla
1 1/2 cups shredded coconut
1/2 cup chopped walnuts

Preheat oven to 350º. Blend all crust ingredients as for regular pie crust. Pat mixture into an ungreased 8x8" square pan. Bake for 10 minutes or till golden brown. Remove from oven.
For filing: Beat the eggs slightly and add the brown sugar, flour, baking soda and salt. Mix well. Add the vanilla, coconut and nuts by hand. Pour evenly over crust and bake for 20 - 25 minutes. Cool and cut into squares. Dust with 10x sugar before serving.

My mother was absolutely the best baker I have ever known, though when it comes to cookies, my sister, Weezie is a pretty close 2nd. These are a melt in your mouth fabulous treat, and they bring back a tast of our childhood each time we indulge. This recipe can easily be doubled (it's what I usually do) and baked in a 13x9" pan. You'll see why they are so aptly named immediately. YUM-O
