Black Bean Salad Recipe

1-15oz. cans black beans, drained and rinsed
1 C. chopped and seeded tomatoes
3/4 C sweet red, yellow or orange pepper, chopped
2/3 C. sliced green onion
1/2 C. celery chopped
1 T. lemon zest
1 clove garlic, minced
2 T. cilantro, chopped
1 envelope Italian salad dressing mix
1/2 C. vinegar
3/4 C. water
1/8 t. cayenne pepper
2 T. olive oil

Combine all salad ingredients in large bowl.
Combine dressing ingredients, mix well, pour over salad. Cover and chill. Toss gently before serving.
