5 lb. roast
5 slices of bacon
2 tbsp. cooking oil
3/4 cup water
1 (4oz.) can green chilis
2 tbsp. vinegar
1 cloves garlic minced
1 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. thyme
1/4 tsp. oregano
1/4 tsp. marjoram
1/8 tsp. ground cloves
1/8 tsp. ground pepper
1 (8oz.) can peeled tomatoes

Combine water, chilis, spices, etc. Lay bacon on top of roast. Place in roasting pan and pour spice mixture over roast. Cover and cook in 350º oven for about 3 hours or until meat pulls apart with fork. Remove bacon and discard. Mix pulled beef with remaining ingredients in roasting pan. Serve with tortillas. Can be rolled for burritos, etc.

I love easy recipes and Mexican food, and this is both! We traditionally have Mexican food( we are now calling it Guatemalan food for Amy) for Christmas Eve and this is one of my favorites.
