1 pkg. giblets

2 pepper corns
2 cloves
1 bayleaf
little onion,
2 carrots cut up

2 lbs. bulk sausage

1 1/2 c minced onion
3 c. chopped celery, stalks and leaves
1 1/2c. butter
1/2 c. sausage fat
16 c. soft bread cubes (2 bags)
4 tsp. salt
3 tsp. sage leaves
2 tsp. thyme
1 tsp. pepper
2 cans chicken broth
cut up carrots from broth.

Directions:

Wash gizzards, hearts and neck and pkg. of giblets. Season with salt, peppercorns, cloves, bayleaf and onion,and carrots. Heat to boil and reduce heat for 1 to 2 hours until gizzards are tender. Remove giblets and chop in food processor. Dice carrots and RETAIN the juice to use for gravy and stuffing.

Brown sausage and save fat.

In a large skilllet, stir onion, celery and butter and fat until onion is tender. Stir in 1/3 of bread cubes. Turn into deep bowl and add remaining ingredients and toss. Stuff turkey just before putting in oven.

Don't add too much juice. Check for moistness. Bake remaining stuffing in 9x13.
