1 egg
1/4 c. vegetable oil
1/2 c. milk
1-1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
3-4 apples, peeled, cored and diced
Directions:
Directions:
Beat together egg, milk, oil, and sugar. Sift flour, baking powder, salt, and cinnamon into egg mixture. Stir in apples. Mix well. Spray muffin tins with cooking spray and fill 2/3 full. Bake in preheated 400.º oven for 25-30 minutes.
