4 c. pinto beans, dry
3 qts. water

1 lg. peeled onion whole
1 clove garlic, sliced
1 bay leaf
2 tbls. butter or margerine
4 tsp. salt

2 lbs. ground beef (browned)
1 c. tomoatoe juice
3 tbs. chili powder
1 1/2 tsp. cumin

Directions:
Directions:
Bring washed beans to a boil, simmer for 2 minutes. Turn off heat and let set coverered for one hour.

Add onion, garlic, bay leaf, butter and salt. Simmer covered for 2 hours. Remove onion and bayleaf.

Add remaining ingreadients, coverr and simmer for 2 more hours. Add salt to taste.

This or chicken and dumplings was always my request for my birthday dinner growing up. Wrap leftovers in totillas sprinkled with jack cheese and freeze for burritos!
