1/2 cup finely chopped mixed fresh herbs, such as thyme, summer savory, sage, oregano and parsley
2 T finely grated lemon zest
1/4 cup safflower oil
1/4 cup olive oil
3 T fresh lemon juice
2 tsp. dry mustard
1/2 tsp salt.

Combine all ingredients in a non reactive bowl. Use or cover tightly and refrigerate for up to two weeks

Makes about 1 Cup - This fresh, lively marinade has a little bite from the dry mustard. It is best for chicken, veal and seafood. Use dill for grouper.
