3# Butternut squash, peeled, seeded and cubed.
1/4 cup water
1/2 tsp. salt
3/4 cup chopped onion
3 cloves garlic, minced
3 Tlbs. butter
3 cups of your favorite salsa
1-1/2 cups shredded cheddar cheese, divided.

Directions:
Directions:
Place squash, water and salt in large microwave-safe bowl. Cover and cook on high for 8 minutes. Drain and set aside.
While squash is cooking, saute onion and garlic in butter until tender. Stir in salsa and squash cubes.
Spoon half of mixture into greased 13x9x2 inch casserole. Sprinkle with half of cheese.
Cover with remaining squash mixture, and sprinkle with remaining cheese. Cover and bake at 400 degrees for 15 minutes.
Uncover and bake 5 minutes longer until cheese is bubbly and brown.
