8 manicotti shells
2 eggs, beaten
11/2 c. Ricotta cheese
2 c. shredded mozzarella cheese
1/2 c. grated parmesan
1/4 c. snipped parsley
1/2 tsp oregano
1/4 tsp salt

Directions:
Directions:
Boil shells al dente, drain. Rinse with cold water. Combine
eggs, ricotta, half of the mozzarella, parmesan, and
seasonings. Spoon cheese mixture into shells. Pour 2 cups
of your favorite red sauce into a baking pan (to coat the entire
bottom). Place shells in pan and pour remaining sauce (about
another 2 cups or so) over shells and sprinkle the rest of the
mozzarella on top. Refrigerate for 3-24 hours. Bake
Manicotti, covered for 35-40 minutes at 350 degrees.
