Potato Salad Recipe

1 C mayonnaise
1 Tbsp mustard
1 tsp apple or cider vinegar
Salt and pepper

8 cubed potatoes
4 boiled eggs, diced
2 boiled eggs, sliced (for topping)
Green onions, sliced
3-4 chopped sweet pickles
1 chopped dill pickle
Celery, sliced
(sometimes sliced radishes)

Whip the mayonnaise, mustard, vinegar, salt and pepper.
In a large bowl, put in half the potatoes, 2 eggs (diced), green onions, pickles, celery and radishes (if using).
Add half the sauce and mix thoroughly. Add the remaining ingredients (reserving 2 sliced eggs) and sauce, and mix. Top with paprika and reserved sliced eggs.
