1 med onion
2 Tbsp butter
3 1/4 cup canned tomatoes
1 1/2 tsp salt
1/8 tsp pepper
1 tsp sugar
1 pkg (1 1/3 cup) Minute Rice

Directions:
Directions:
Saute thinly sliced onion in butter until tender, not browned. Add tomatoes, salt, pepper and sugar, blending well. Add Minute Rice and bring quickly to boil, fluffing rice gently with fork (don't stir).

Cover and remove from heat. Let stand 10 minutes. Rice will absorb fine tomato flavor and rich red color.

Before serving, top the rice with link sausages that have been pan fried.

This reminds me of Opa walking through the door in the evening, after the long bus ride from the site. ~Ann

A simple meal but somehow it is one my favorite staple meal memories of growing up. I remember a "happy hungry" feeling when I'd arrive to the table to see the skillet filled with the fluffy rice, bright red tomatoes and links of sausage. It still remains a "go to" comfort food for me. ~Barb Stewart
