2 c. rice - fully cooked
¾ c. thinly sliced onions
1 ½ c. green peppers coarsely
3 T. salad oil
chopped
¼ c. cornstarch
2 c. chicken stock
3 T. soy sauce
2 c. sliver cooked chicken
3 c. ripe tomatoes (cut in wedges)

Cook green pepper and onions in oil in covered skillet over low heat until tender but no browned. Blend cornstarch with a small amount of chicken stock. Gently stir chicken and stock into vegetables. Cook and stir until sauce is clear and thicken. Add tomatoes and cook just until heated. Serve over rice.
