Vegetable Soup Recipe

2/3 cup sliced carrots
1 cup diced onion
2-3 garlic cloves, minced
3 cups beef broth
3 cups thinly diced green cabbage
1 cup green beans
2-3 large cans of crushed tomatoes
1 tsp. dried basil
1/2 tsp. dried oregano
1/2 cup diced zucchini

In a large saucepan, add about 4 tbsp. olive oil. Saute carrots, onions, cabbage and garlic over low heat until softened. (15-20 min) Add rest of ingredients and cook on low until everything is tender.

This really tastes good after it sits for a couple of hours also.
