1 lb cooked and cubed chicken
1/2 c chopped celery
1/2 c chopped onion
3/4 c uncooked Minute Rice
1 1/4 c boiling water
1/2 tsp salt
1 can cream of chicken soup, undiluted
1 tbsp brown sugar
2 tbsp soy sauce
1 tsp butter
1 1/2 - 2 c chow mein noodles

Directions:
Directions:
In a saucepan over medium heat, cook celery and onion in a small amount of olive oil. Place rice into a lightly greased 2-quart baking dish. Pour boiling water over rice. Stir in remaining ingredients except chow mein noodles. Cover and bake for 30 minutes at 350º. Stir and bake uncovered for another 30 minutes. Sprinkle chow mein noodles over the top just before serving.
