Directions:Cream is first milked from the cow and then the milk turns to clabber and is churned and butter is made.
Butter is a very useful thing in several ways: to sell, and eat, and season with. Richer butter is made off of Jersey cows' milk. Sometimes butter is puffy when they put too much hot water in it.
Sometimes butter is put up in May and is kept till winter and is called May butter. Butter is put up in molds and sold.
The butter is taken out of the milk and salted and the milk is worked out of it.

Notes: When we began compiling recipes for our cookbook, Peggy wrote in an email to me:
"I have come across an essay on butter that Grandma Nollie wrote in school and made a grade of 90 on. I am attaching it so you can decide if you would like it in the recipe book even though it is not strictly a recipe."
Peggy ponders further in her The Godwin Archives, Volume IV: NEIGHBORLY NOTES, Schoolwork, and Miscellaneous, (2007).
“This appears to be, not a true recipe for making butter, but instead an essay that young Nollie Hill has written as a school assignment. She must have pleased her teacher, for the grade was a 90.”
And she also notes that this butter recipe may have been composed circa 1900 .
