1 pkg Manicotti
1 pkg frozen spinach, thawed and liquid squeezed out
1 small onion
2 cloves garlic
1 tsp basil
1/2 tsp oregano
salt and pepper to taste
1 small carton ricotta cheese
1/2 c cottage cheese
2 c mozzarella cheese
1/4 c Parmesan cheese
1 egg (substitute)
1 jar favorite spaghetti or marinara sauce
small amount of olive oil

Directions:
Cook and drain manicotti. Saute onion in olive oil. Add garlic, basil, oregano, spinach, salt, and pepper. Cook together until well mixed and flavors blended. Meanwhile, mix together ricotta, 1 cup of mozzarella cheese, cottage cheese, Parmesan cheese, and the egg. Mix with spinach mixture. Stuff carefully into manicotti. Pour 1/2 to 1 cup of sauce into a casserole dish. Lay stuffed manicotti over sauce. Pour remaining sauce over the manicotti. Bake covered at 350º for about 45 minutes. Remove cover and sprinkle remaining mozzarella cheese over top and bake another 10 minutes. Remove and let rest for about 5 minutes before serving.
