Crust:
1 bag frozen shredded hash browns, thawed and broken apart
2 eggs
salt and pepper to taste

Egg topping:
7 eggs
1/2 c milk
2 c shredded cheddar cheese

Optional toppings
chopped ham
green and red peppers
cooked and crumbled bacon
onions
sliced mushrooms
cooked and crumbled sausage
sliced black olives

Directions:
Directions:
Preheat oven to 400º. Combine potatoes and eggs in bowl. Place parchment paper on cookie sheet. Spread potato mixture on paper forming a 15-inch circle. Pat potato crust to firm using palm of hand or back of spoon. Season with salt and pepper. Bake crust for 20 minutes or until golden brown in color. Meanwhile, whisk eggs and milk in bowl. Add 1 cup of cheese. Cook in microwave on high for 3 minutes; stir. Cook an additional 3 minutes and stir again. Spread slightly cooked eggs evenly over potato crust. Top with additional topping and sprinkle remaining cheese over the top. Bake and additional 10 minutes. Use a pizza cutter to cut into wedges. Serve immediately.
