2 c. flour
1 3/4 c. sugar
1/3 c. unsweetened cocoa powder
1 1/2 tsp. baking soda
1 1/2 c. milk
1/2 c. butter, softened
1 tsp. vanilla
2 egg whites
1/4 c. sugar

Chocolate Frosting
2 T. butter
1/4 c. unsweetened cocoa powder
1/12 c. powdered sugar
3 T. milk
1 tsp. vanilla
1 1/2 c. powdered sugar
Milk if needed, to make of spreading consistency.
Makes 1 cup

Directions:
In a large bowl, combine flour, 1 3/4 c. sugar, cocoa powder and baking soda. Add milk, butter and vanilla.
Beat with an electric mixer on low speed about 30 seconds or until combined. Beat on medium to high for 2 minutes, scraping side of the bowl occasionally.
Thoroughly wash beaters. In another mixing bowl, beat egg whites until soft peaks form. Gradually add the 1/4 c. sugar, beating until stiff peaks form. Fold into batter. Pour batter into 2 9" pans that have been sprayed and floured.
Bake @ 350º for 25-30 minutes or until toothpick inserted near the center comes out clean. Cool cake layers completely before frosting.


For Frosting, beat butter and cocoa powder until butter is softened. Gradually add 1 1/2 c. powdered sugar, beating well. Slowly beat in 3 T. milk and 1 t.vanilla.
Slowly beat in additional 1 1/2 c. powdered sugar and additional milk if needed to make of spreading consistency.
