4 t. yeast
1 T. sugar
1 1/4 warm (110 degrees) water
2 c. sorghum-corn flour blend (Carol Fensters)
1/2 c. potato starch
1/2 c. Expandex or more potato starch
1/4 c. dry milk powder
1 t. guar gum
1 t. xanthan gum
1 t. salt
1 t. Italian seasoning (basil, rosemary, thyme)
1 T. olive oil
3 egg whites
1 t. vinegar

If using a French bread pan without ends make up a foil end so "dough" doesn't ooze off the pan. Pre-heat oven to 425º Combine dry ingredients together. Proof yeast with sugar and water. Dump all ingredients into mixer and beat for 2 minutes. Pour into bread pan and let rise 20 minutes until about double. Bake uncovered for 10 minutes then cover and back anther 20 minutes.
