1 - 10 oz. package frozen chopped broccoli, thawed
3/4 cups chopped processed cheese
3 T butter, divided
1/4 cup chopped onions
1-1/2 cups hot, cooked rice (instant or regular)
1- 8 oz. can sliced water chestnuts, drained
1/3 cup whipping cream
1 T lemon pepper seasoning

Preheat oven to 375º , Grease a 1-1/2 quart baking dish.

Microwave broccoli in a microwave-safe bowl following package directions; drain. Add cheese and 2 T butter to broccoli. Microwave on HIGH, stirring frequently until cheese is melted, about 2 minutes.

Meanwhile, melt remaining butter in a small skillet over medium-high heat. Saute onion in butter, stirring continually, until tender, about 2 minutes

Combine broccoli mixture, onion mixture, rice, water chestnuts, whipping cream and lemon pepper in a large bowl and mix well.

Spoon into prepared baking dish. Bake for 15 minutes.

Note: If you use regular rice in this recipe, you will save money and it takes only 20 minutes to prepare. Cook the rice while you prepare the broccoli and cheese and saute the onion or, for convenience, cook it ahead of time.
