2 lbs beef tenderloin cubes, 2/3 c flour, salt and pepper to taste, 2 c cornflake crumbs, 1 c finely chopped pecans, 1/2 c parmesan cheese, 1 tsp paprika, 1/2 tsp nutmeg, 1/2 c butter, 1/4 c flour, 2 c milk, 1 c grated cheddar cheese

Preheat oven to 400. Combine 2/3 c flour, salt and pepper in a bag. Add meat and shake until coated. Combine cornflake crumbs, peacans, parmesan and spices and set aside. Combine butter, 1/4 c flour and milk in a saucepan, heat until mixture bubbles. Stir in cheddar cheese. Dip floured meat into cheese mixture then roll in cornflake mixture until well-coated. Bake on greased cookie sheet for 15 minutes until golden brown.
