2 pounds ground beef
2 pks flour tortillas
3 lg cans red enchilada sauce
2 cans diced tomatoes w/chilies
1 4 cup bag of taco cheese or mixed cheese
2 11/2 cup bags mozzarella cheese
Red pepper to taste

Directions:
Directions:
Cook hamburger, drain grease.
Add diced tomatoes w/chlies, red pepper to taste and extra chilies if desired. Pour one can of enchilada sauce into each pan. Roll tortillas with meat and a little of mexed cheese, setting them in each pan as you go which will squish the sauce up and around them as you make room for more in the pan. 8 - 10 will fit in a 9 x 11 pan.You may need two pans.
Pour 1/2 can of enchilada sauce over each to wet tops of tortillas. Distribute leftover mixed cheese over two pans then one bag of mozzarella on top of all. Cook at 350º for 30 minutes or until cheese is melted inside.
