1 Tbsp. Butter
¾ cup almonds, blanched and sliced
1 lb. spinach, rinced and torn into bite size pieces
1 cup dried cranberries

DRESSING:
2 Tbsp. toasted sesame seeds
1 Tbsp. poppy seeds
½ cup white sugar
2 tsp. minced onion
¼ tsp. paprika
¼ cup white wine vinegar
¼ cup cidar vinegar
½ cup veg. oil


Whisk together the dressing ingredients and toss with spinach just before serving.

Directions:
In a med. Saucepan, melt butter and add almonds stirring until lightly toasted (don’t burn). Let cool.

Combine the spinach with the toasted almonds and cranberries.

Add desired amount of dressing. Toss and serve.
