3 Tbls. Olive or veg. Oil
2 cups fresh broccoli florets
1 med. Onion, chopped (abt. ½ cup) 1 med. Red bell pepper, chopped (abt. 1 cup)
3 Tbls. Flour
¾ cup milk
¾ cup chicken broth
1 tsp. cumin
4 cups cooked chicken, cut up
1 ½ cups grated Jack cheese
1 pkg. refrigerated cheese-filled Tortellini, cooked and drained (not the family size)
½ cup crushed tortilla chips

Heat oven to 325degrees. Grease a 3 qt. Casserole. Heat 1 Tbls. Oil in skillet over medium-high heat. Cook broccoli, onion and red pepper in oil about 3 minutes stirring frequently, until crisp-tender. Remove veggies from skillet, reserve. Cook flour and remaining 2 Tbls. Oil in same skillet over low heat. Stir constantly until smooth. Stir in milk, broth and cumin. Heat to boiling over med. Heat, stirring constantly. Remove from heat. Stir in chicken, ¾ cup of the cheese, tortellini and veggies. Spoon into casserole dish., sprinkle with remaining cheese and the tortilla chips. Bake uncovered for 25 to 35 minutes or until bubbly.
