¼ c. milk
1 c. heavy whipping cream
¼ c. seasoned bread crumbs
1 (4oz.) jar diced pimento
4 boneless, skinless chicken breasts
½ c. grated parmesan cheese
3 Tbsp. Butter or margarine
¼ c. minced fresh basil
1 Tbsp. Olive oil
1/8 tsp. Pepper
1 can chicken broth
1 tsp. Cornstarch

Directions:
Directions:
Preheat oven to 350 degrees. Place milk and bread crumbs in separate shallow bowls. Dip chicken in milk, then coat with bread crumbs. In skillet over medium heat, brown chicken on both sides in butter and olive oil, salt and pepper the chicken. Remove and place in baking dish in preheated oven for about 30 to 45 minutes. Add ½ cup chicken broth to skillet. Bring to a boil over medium heat and stir to loosen browned bits from bottom of pan. Stir in whipping cream and pimento; boil and stir for one minute. Reduce heat. Stir in parmesan cheese, basil and pepper and cook until heated through. Mix cornstarch with remaining broth and stir into skillet if needed to thicken sauce. Pour over chicken and serve. ºººº
