l large cauliflower
2 tbsp olive oil
l stick of butter
salt
pepper
1lb of penne or small shells

Directions:
Directions:
Bring water to boil in a pot. Wash cauliflower and cut into chunks. Add to boiling water and cook until tender. Drain. In a frying pan add olive oil and heat pan. Add cauliflower little at a time and mash (like mash potatoes) add salt and pepper to taste. Add butter little at a time using 3/4 of the stick. Cover high heat for a few minutes. Stir cover and repeat until a little crusty. Be careful not to burn it. Cook pasta drain add the remaining piece of butter to the pasta. Mix thoroughly with pasta. Enjoy!

This was my mother's recipe (Maria Colletti) Although she taught me how to cook. Later on in her life she would call me and ask "How do we make the Pasta with Cauliflower"? We both would laugh! She was the creator and teacher and I was her cookbook! From, Margaret
