6 medium potatoes
1 small onion
1 tsp salt
oil for frying
3 tbs flour
1/2 tsp baking powder

Directions:
Wash, pare and HAND grate the potatoes into a mixing bowl. Strain but not to dry. Add grated onion, 1 tsp salt and beaten egg to the potato mixture. Add 3 tbs flour and 1/2 tsp baking powder into the mixture and mix well. If juice is retained add a little more flour. Put oil into a frying pan and raise heat to heat the oil. Once the oil is heated drop spoonfuls of potato mixture into the frying pan. Make sure there is enough oil to cover the potato latkes. Make sure both sides are browned. Once browned and cooked place the latkes on paper towels to drain excess oil.

You may serve the latkes with applesauce or sour cream. Also you may substitute other vegetables and make different types of latkes such as cauliflower. Also if you need to make larger quantities - you can adjust the recipe accordingly.
