2 cups dark honey
1 cup double strength coffee
4 large eggs
2 tsp vegetable oil
1 cup sugar
3 1/2 cups flour
dash of salt
1 tsp baking soda
2 tsp baking powder
1 tsp allspice
1 tsp cinnamon

Directions:
Directions:
In a small pot bring the 2 cups of dark honey to a boil, let cool and then add the 1 cup of coffee. In a mixing bowl, beat the eggs until light and lemon colored then add the 2 tsp vegetable oil gradually - blending well. In a seperate mixing bowl sift together the dry ingredients (sugar, flour, salt, baking soda, baking powder, allspice and cinnamon) and then add them to the egg mixture a little at a time alternating with the honey - coffee mixture (about a third each time) and mix well. Pour the smooth batter into a greased loaf pan. Bake at 325 degrees for about 1 hour. Let cool prior to serving.
