4 to 4 ½ cups bread flour
1 package active dry yeast
1 cup milk
1/3 cup sugar
1/3 cup butter, margarine, or shortening
1 teaspoon salt

Directions:
Add yeast to ½ cup of warm water (115º to 120º). Try hot water from faucet. If water stings back of hand, it is to warm. In large bowl combine 2 cups of flour. In saucepan heat milk; sugar; butter, and margarine, or shortening just till warm (115º to 120º) and butter is almost melted; stir constantly. Add to flour; add eggs; and yeast. Beat at low speed of electric mixer for ½ minute, scraping sides of bowl constantly. Beat 3 minutes at high speed.
Stir in as much of the remaining flour as you can mix in with spoon. Turn out onto a lightly floured surface. Knead in enough of the remaining flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in lightly greased bowl; turn once to grease surface. Cover; let rise in warm place till double (about 1 hour).
Punch down; work in salt; divide dough in half. Cover; let rest 10 minutes. Salt kills yeast and is the reason to add salt later in process. Shape into desired rolls. Lightly grease 24 muffin cups. Divide each half of dough into 24 pieces. Shape each piece into a ball, pulling edges under to make a smoth top. Place two balls in each greased muffin cup, smooth side up. Cover; let rise till nearly double (about 30 minutes). Bake in 375º oven for 12 to 15 minutes or till done.
Brown-and-Serve Rolls: Prepare Dinner Rolls as directed above. Shape into desired rolls. Cover; let rise till nearly double (about 30 minutes). Bake in 325º oven about 10 minutes; do not brown. Remove from pans; cool. Wrap, label and freeze.
To serve, open packages containing desired number of rolls. Thaw rolls in packages at room temperature for for 10 to 15 minutes. Unwrap completely. Bake on ungreased baking sheets in 400º oven about 10 minutes or till golden. Serve warm.
To reheat rolls in oven, place rolls in a brown paper bag; sprinkle bag with water and fold the opening closed. Heat rolls in 325º oven for about 10 minutes or till heated through. Or, reheat rolls in foil, sprinkling rolls with water before wrapping.
