2 tbsp. butter
1 1/2 cups onion chopped
4 cups potatoes chopped
5 cups water
6 chicken bouillon cubes
4 cups canned pumpkin
1 tsp. salt
1 tsp. pepper
1/2 tsp. red pepper flakes (or use 1-2 tsp. Tabasso Sauce)
1/4 tsp. nutmeg
1 cup Half and Half milk

Directions:
Directions:
Saute onion in butter until soft. Add potatoes, water and bouillon cubes. Cook until potatoes are soft. Puree in blender. Return to pan and add pumpkin, salt, pepper, red pepper, nutmeg and Half and Half. Heat to a simmer.

Should be the consistency of cream of tomato soup. Taste and adjust seasoning to your taste.
