3-4 Sage Leaves 5-8 Cloves
1 T. Cumin seeds 1 Clove Garlic
2 T. Sesame seeds 1 tsp. Italian Seasoning
1 tsp. Pepper Corns

Cook over low heat in skillet until sesame seeds are brown. Put into blender until finely ground. ADD:

1 tsp. Salt 1/2 Bell Pepper, cut in chunks
2 Whole Tomatoes cut in chunks 1 can Tomato Sauce
1 stalk Celery cut in 1/2" chunks 1 tsp. Paprika
1/2 Onion, cut in chunks

After combining all of the above ingredients, puree in blender. Place turkey in a browning/cooking bag and pour the pureed blend over the top. Place one 8 oz. jar of green olives over the puree and turkey. Close up bag and cook according to cooking bag directions.

When I worked for the Tulsa Police Department we had a girl from Honduras working with us. She had a fair complexion, not what you expect a Hispanic person to look like. We always got a kick out of arrestees coming in claiming they didn't speak English, and soon be surprised when she'd start speaking to them in fluent Spanish. They'd have to "give it up" after that. Her husband was from El Salvador and this was how they prepared their turkey. She brought it to work one time and it was the best turkey I had eaten prepared, other than the usual smoked we do at Thanksgiving.
