2 Tb sugar
1/2 cup butter
1 egg yolk
1 cup flour
1/2 tsp salt

CREAM FILLING:
1/2 cup sugar
2 egg yolks
1 whole egg
1 Tb butter
2 cups milk
2 Tb corn starch
pinch salt
1/2 tsp vanilla

Directions:
Directions:
Pastry: Cream butter and sugar. Beat in the egg yolk and
mix well. Add flour and mix. Pat dough out on the bottom
of pan.Bake in a 400º F oven for 10 to 12 minutes.

Cream Filling: Mix the ingredients in the order given and
cook in a double boiler until thick. Cool then spread on
pastry.

This can be made into a lemon cream
pastry by,decreasing the milk to 1 1/2 cups
and adding 1/2 cup lemon juice after the
