1/4 cup balsamic vinegar
1/4 cup pure maple syrup
1/4 cup olive oil
2 6-ounce packages baby spinach leaves
2 large unpeeled Granny Smith apples, halved, cored, thinly sliced
8 ounces extra-sharp cheddar cheese, cut into 1/2-inch cubes
1/2 cup chopped toasted walnuts

Directions:
Directions:
Combine vinegar, maple syrup, and oil in small bowl; whisk to blend. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. rewhisk before using.)

Combine spinach, apples, cheese and walnuts in large bowl. Toss with enough dressing to coat. Season salad to taste with salt and pepper. Transfer salady to serving bowl.
