2 ounces cream cheese
10 sun-dried tomatoes in oil, drained and finely chopped
1 ounce sun-dried tomato oil
2 tbsp finely chopped lemon zest
4 tbsp chopped flat-leaf parsley
Fresh ground pepper to taste
36 baguette toasts

1. Combine the cheeses, tomatoes, oil, zest, and parsley, and season to taste with pepper.

2. Spread thickly on each toast, arrange the toasts on a baking sheet, and place under a preheate boiler until puffed and golden. Serve immediately.
