Vegetable- Sweet Corn Tomalitos Recipe

5 T butter, softened
1/4 c mesa harina (or you can use corn meal)
1/3 c sugar

1/2 c water
1 c corn (1/2 can), drained
1/2 c corn meal

1 t baking powder
1/2 t salt
4 t milk
1 c corn (other 1/2 of can)

Mix 1st 3 ingredients until fluffy. Mix next 3 ingredients in food processor then add to fluffy mixture. Add last 4 ingredients; mix well.

Pour into a greased 8x8 pan. Cover with foil.

Cooking options (both are just as good but just depends on your time restraints):

Longer option:
Steam for 1 hour over a pot of boiling water

Shorter option:
Cook with a pot of water in oven at 350 for 20 min
