1 8 oz. package mozzarella cheese
3 tbsp flour
salt and pepper
2 large eggs
1/4 cup water
2/3 cup seasoned bread crumbs
1/2 cup grated locatelli cheese
1/4 tsp. minced garlic (optional)

Directions:
In a heavy saucepan, heat evoo about 1" deep. Let get to about 365º
Meanwhile, cut cheese into strips about 1/2" by 1/2". Place flour on a plate, season with salt and pepper. Roll cheese strips in flour to coat
Combine the egg and water in a shallopw bowl. In another bowl, combine breadcrumbs, cheese and garlic. One stick at a time, coat cheese in egg wash and then in breadcrumbs. Place on a single layer. Fry in small batches till golden brown, about 1 minute on medium heat. Remove with slotted spoon. Season with more salt and pepper
