Red Bell Peppers (about 10)

evoo, about 1/2 cup
5 cloves fresh garlic, minced
1 cup fresh basil, chopped
1 tsp. lemon zest

Directions:
Directions:
Place the peppers in a broiling pan and broil on high. Check peppers frequently. Cook each side till back and charred. Place peppers in a paper grocery bag and seal tightly. Let cool completely, about 1 hour
Remove skins and seeds of peppers and slice in thin strips. Place in bowl. Add the rest of the ingredients and combine well. Taste for seasoning. Store in a glass jar in the refrigerator for up to one week.

These peppers are a labor of love in my home. I get up early on Saturday mornings and head to the farmer's market to buy the peppers. They're great on sandwhiches or by themselves. My brother in law, Gary says it's not a meal unless we have these peppers, especially in the summer time
