4 large pieces of haddock, ready for baking
3 tomatoes, sliced thin
1/4 cup fresh basil, torn
1/4 fresh parsley, chopped
salt
pepper
fresh lemon zest
2 tbsp butter, softened
3/4 cup seasoned breadcrumbs
evoo, about 1/2 cup

Directions:

Season the fish with salt and pepper. Placed in a lightly greased baking dish. Preat oven to 325
Place several slices of tomatoes on each haddock piece-- try to cover the whole piece. Top each piece with the fresh herbs
Mix the breadcrumbs with the lemon juice, zest, butter and evoo. Press about 1/4 of the mixture all over each of the haddock pieces. Drizzle each with a little more evoo
Bake for about 30 minutes till fish is tender, but not dry and the breadcrumb mixture is crunchy
