Fantasy Mashed Potatoes Recipe

5 lbs Yukon Gold Potatoes, peeled and washed
1 stick butter
1 shallot, minced
3 chives, minced
1 8 oz. package cream cheese, at room temp
1/2 cup heavy cream
milk as needed
food coloring
salt
pepper
parsley for garnish

Directions:
Directions:
Cook potatoes in salted boiling water till tender. Drain and cover with a dish towel till ready to use.
Saute shallot in the butter till tender and translucent. Add the chives. Cook a minute or so longer. Add this mixture to the potatoes and whip with an electric mixture till smooth. Add the heavy cream, the cream cheese and milk as needed. Continue whipping till very creamy. Season with salt and pepper
Add the food coloring of your choice (I like to use a combo of red and blue to make a light lavender) Place the potatoes in a glass triffle dish and top with a sprig of parsley.

This dish not only tastes fantastic, it always brings ooos and ahs to the table. Change colors to fit the occasion--for example: How about a lovely pink for Easter or a pale blue for a dinner party. Just remember, less is more with the coloring. Use as little as possible. Understated is best.
