1 (8 oz.) package of manicotti
2 (27 oz.) jars of Marinara Sauce (or your favorite)
2 eggs
1 (15 oz.) container ricotta cheese
4 c shredded mozzarella cheese
1 c grated Parmesan cheese
1 package of frozen spinach
1/4 cup freshly chopped parsley (1 tbsp dried)

Thaw spinach and drain (make sure you get as much moisture out as possible) Cook manicotti according to package directions; drain. Preheat over to 350º. Spray bottom of 15X10X2 inch glass baking dish with Pam. In large bowl, beat eggs; stir in ricotta cheese, 3 c mozzarella cheese, 3/4 c of Parmesan cheese, parsley and spinach. Spread one jar of the sauce on bottom of baking dish. Fill each manicotti with mixture. Arrange filled manicotti in baking dish. Top with second jar of sauce and remaining cheeses. Bake, covered with foil until bubbly, about 45 minutes. Uncover and continue cooking until cheese is melted, about 5 minutes. Let stand 5 minutes before serving.
