3 eggs 2 tsp. cinnamon
1 cup oil 1 tsp. baking soda
2 cups sugar 1 tsp. baking powder
2 cups grated zucchini ½ cup chopped nuts optional)
1 tsp. vanilla 3 cups flour
1 tsp. salt

Directions:
Directions:
Beat eggs until foamy. Add oil, sugar, vanilla & zucchini. Mix well. Add dry ingredients & nuts to mixture. Beat well. Divide batter in half. Makes 2 loaves. Bake at 325˚ for 45 minutes to 1 hour. Remove from pan and let cool.
