6 T butter
1 medium onion diced
1 red bell pepper diced
1 pound mushrooms - quartered
1 1/2 - 2 lbs green beans - cut into 2" pieces
1/4 c flour
2 c milk
pinch of cayenne pepper
pinch of nutmeg
1 c parmesan cheese
1/4 c breadcrumbs
1 can French's French Fried Onions

In a large skillet, melt 2 tablespoon of butter. Add onion. Saute until soft. Add bell pepper and mushroom and cook until softened and most of the liquid is gone. Season with 1 teaspoon salt. Set aside.
Cook beans about five minutes - until bright green. Drain, cool, then mix with mushroom mixture.
Melt 3 tablespoon of butter over medium low heat. Add 1/4 cup flour, stir constantly until mixture begins to turn golden - about 2 minutes. Add milk a little at a time and continue to stir until mixture has thickened - about three minutes. Stir in cayenne, nutmeg, 1/4 teaspoon pepper, and 1 teaspoon salt. Remove from heat, cool then combine with beans.
Butter a 9 x 13 glass dish. Spread half of the green beans over the bottom. Sprinkle hon 1/2 of the parmesan cheese, then add rest of beans. Combine remaining parmessan and bread crumbs and sprinkle over casserole. Cover with foil and refrigerate.
Heat broiler with rack about 8" from heat. Cook casserole covered until the mixture is bubbly and heated through. Uncover and cook until top is golden brown.
Sprinkle french fried onions over top and serve immediately.
