10 white onions, sliced thin
3 tbsp evoo
1 tbsp butter
3 tbsp sugar
salt
pepper
3 tbsp apricot preserves
2 tsp balsamic vinegar
honey

Directions:
Directions:
Heat large skillet till very hot. Add evoo and butter. Add onions and cook on low heat for 5 minutes. Do not season yet. After 5 minutes, add sugar, salt and pepper. Continue cooking on low heat for another 20 minutes. Stir in vinegar and apricot preserves. Cook another 5 minutes.
Remove from heat.
Serve on top of toasted baguettes with a drizzle of honey

These onions can be served with anything. They are so versatile and sweet, even the kids will love them. Try them with sun dried tomatoes, on grilled cheese sandwiches or with pork chops. They are sure to become a staple in your home. Keep them in the frige for up to a week
