2 pounds yukon gold potatoes
evoo
salt
pepper
grated locatelli cheese
paprika

Directions:
Directions:
Preheat oven to 450º
Slice the potatoes into wedges--no need to peel
soak in ice water for about 20 minutes. Drain and dry completely
Spray a large cookie sheet with Pam
Mix the potatoes with the evoo, salt, pepper and cheese. Spread out in a single layer
Bake 20 minutes. Flip and rearrange with a spatula
Continue baking till the fries are a deep golden brown. Season to taste
Serve hot

These are amazing! My family loves to eat them with honey mustard sauce, but good old fashioned ketchup is great, too. McDonald's -- eat your heart out! The only thing missing is the arch!
