1-- 12 to 15 pound Fresh Turkey
1 large white onion
1 large macintosh apple
evoo
salt
pepper
melted butter
paprika

Preheat oven to 450º
Wash the turkey inside and out and pat dry. Massage him with a good amount of evoo. Salt and pepper him inside and out. Rub a bit of evoo in the cavity and "stuff" with the apple and the onion. Make sure the cavity is closed.
Place him in a roasting pan, and cover the wings and the legs with foil, molding the foil around each.
Cover the roasting pan tightly with foil and pop him in the oven
Immediately lower the oven tem to 325º. Roast for 2 hours without peeking. Remove the foil. Baste him with some melted butter and continue cooking till the timer pops up--or until when the legs move freely. Baste every 20 minutes till done.
Remove from oven and cover with foil again.
Reserve the juices to make the gravy
Let rest for at least 20 minutes so that the juices redistribute. Remove the apple and the onion.
Place him on a serving platter, and let your hubby carve him up!!

Turkey is one of my all time favorite meats. I cook it all year long, but there is something so special about a real Thanksgiving turkey. The smell takes over the entire house, and I am transported back to my mom's kitchen. Serve this with my sausage stuffing. Is there anything better?
