1 fresh container basket cheese, coarsley chopped
2 oz. grated romano cheese
2 oz grated locatelli cheese
8 oz lean ham, finely chopped
1 lb. ricotta cheese
3 eggs
1 tbsp fresh chopped parsley
1 tbsp fresh chopped basil
sprinkle of fresh oregano
gray salt
fresh ground black pepper
1 unbaked 10 inch pie crust (see recipe)

Preheat oven to 325º
Mix all ingredients and pour into unbaked crust. Bake for 60 - 70 minutes or until knife inserted into center of pie comes out clean. Cool and serve

Though this is called Easter pie, once you try it you'll want to serve it all year long. Its rich, cheesy flavors are almost intoxicating. I like it served at room temp, but it's great chilled, too. And it only gets better the next day.
