1/2 c. shortening
1 c. sugar
2 large eggs, beaten
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 Tbsp. buttermilk
2 c. peeled and diced apples

Topping:
2 Tbsp. margarine, softened
1 tsp. cinnamon
2 Tbsp. flour
2 Tbsp. sugar

Mix until crumbly.

Directions:

Cream shortening and sugar. Add eggs and vanilla; mix well. Add 1 c. of sifted dry ingredients; mix. Add buttermilk. Add last cup of dry ingredients. Fold in apples. Pour into a greased loaf pan (9"x5"x3"). Sprinkle on topping. Bake at 325º for 45-60 minutes, until test comes out clean. Cool in pan 15 min., then finish cooling on rack.
